Babies and children can be a little fussy when it comes to eating fish. Luckily Isabelle will really eat anything but when she does have an older cousin (18 months) that isn’t to keen on fish dishes but this recipe was a hit with both!

Ingredients

  • 1 fillet of white fish (cod/haddock etc) check that the fish is fully deboned and then cut into 1″ pieces
  • 1 large sweet potato (cubed)
  • 1 Sprig of Rosemary
  • 1 shallot
  • 1 tsp light olive oil
  • 1 red pepper (cubed)
  • 1 clove garlic
  • 1 tbsp all purpose flour
  • 1 bay leaf
  • 170 ml milk
  • 1tbsp grated parmasean cheese
  • Pinch paprika
  • Sprinkle of Oregano & Parsley or alternative (optional)

Method

  1. Boil the potatoes until soft
  2. Sautee the shallot, pepper and garlic until soft and shallots have a little colour then stir in the flour
  3. Add the milk, herbs, cheese,potatoes and heat to boiling point then allow to simmer
  4. Finally add the fish to the top and cover until the fish is fully cooked

Handy Tip You may want to add fish seasoning for extra flavour
