Could the British summer have finally arrived? I’m not going to take any chances, whilst the sun is out and the weather is blisteringly warm there’s nothing better than frozen cocktails using the fabulous British Strawberries.
Here’s a great recipe for that early evening cocktail in the garden
375g caster sugar
250ml water
375ml freshly squeezed lime juice
165ml white rum
300g frozen strawberries
1 Bunch fresh mint
2 limes
To start make the limeade concentrate by heating the caster sugar and water in a medium saucepan until the sugar is dissolved.
Leave it to cool for around 10 minutes, then add the 375ml lime juice. Mix well and then freeze the mixture. Its best to do this the night before.
When you are ready for your cocktails combine the frozen lime mixture with the rum and strawberries. Then add fresh mint leaves (amount is completely up to you) and the pulp of two limes. Blend your mixture until smooth.
