Cheesy Vegetable Nuggets

Ingredients

 

  • 8 oz (1 cup) frozen broccoli florets
  • 2 carrots, peeled and diced (or grated)
  • 1/2 cup of sweetcorn
  • 4 oz (1 cup) dry breadcrumbs
  • 6 oz (1 1/2 cups) Cheddar, grated
  • 2 1/2 tbsp water
  • 2 1/2 tbsp olive oil
  • 1 1/2 tsp baking powder

 

Method

  1. Heat the oven to 375 deg F, 190 deg C.
  2. Cook the broccoli, then drain and chop well.
  3. Combine with the remaining ingredients and mix well.
  4. Form the mixture into nugget shapes and coat in breadcrumbs
  5. Place on a greased baking tray, about 3inches apart.
  6. Bake for 20-25 mins, turning halfway through the cooking time.
  7. Serve warm.
